In the heart of the Coteaux Sézannais region, Pertois-Moriset’s L’Assemblage cuvée embodies the harmonious blend of Pinot Noir and Chardonnay, two iconic grape varieties of Champagne. This Extra-Brut champagne, with less than 3 g/L of dosage, is the result of a subtle blend: 50% Pinot Noir for structure and roundness, 50% Chardonnay for freshness and elegance. With 70% of the vintage’s wines and 30% reserve wines, this cuvée combines the liveliness of young wines with the complexity of more mature wines, vinified in stainless steel tanks and barrels for the vintage’s wines, and in large oak casks and stainless steel tanks for the reserve wines.
Made from vines with an average age of 48 years, grown on 13.50 hectares in the Coteaux Sézannais, this champagne benefits from sustainable viticultural practices: natural winter grass cover, seasonal plowing, gentle protection, and hand harvest. After a minimum of 15 months of aging on the lees in the cellar, L’Assemblage reveals all its richness and finesse, with an alcohol content of 12.5% ABV.
In the glass, the wine displays a pale golden color, bright and clear, enlivened by a fine, persistent stream of bubbles, a sign of controlled effervescence. On the nose, the bouquet is generous and complex, marked by aromas of ripe yellow fruits (peach, apricot), notes of white flowers (acacia, hawthorn), and a hint of lightly toasted brioche. A subtle minerality recalls the Sézanne origin of the grapes. On the palate, the attack is fresh and dynamic, carried by balanced acidity that provides lovely tension. The texture is creamy and velvety, with a lovely length on the palate. Aromas of yellow fruit and brioche blend with citrusy and slightly spicy nuances, resulting in a harmonious and persistent finish.
