Our Melon de Bourgogne is harvested from an 1,800 ft elevation vineyard in the Chalone appellation high in the Gavilan Mountain Range at the base of Pinnacles National Park. Planted in 1985 by the luminary Dick Graff on south-facing slopes of decomposed granite and limestone soils, essentially an extinct volcano. Overlooking Monterey from the east side of Salinas Valley, the site benefits from big diurnal swings of warm days, cool nights, and a balanced coastal influence. This unique terroir offers excellent drainage and mineral-rich soils, ideal for producing wines of freshness, focus, and minerality.
The grape clusters are gently pressed and cold settled overnight before the fresh juice is transferred to concrete eggs and stainless steel for its spontaneous native yeast fermentation. Once primary fermentation is complete, the eggs are topped up and sealed for a 6-month sur-lie élevage. The ageing on lees adds a subtle texture, preserving the variety’s distinct character and showcasing the unique combination of California sunshine, limestone soils, and Loire Valley tradition. - Winemaker
