Planted in 1985 by the luminary Dick Graff on south-facing slopes of decomposed granite and limestone soils, essentially an extinct volcano. Overlooking Monterey from the east side of Salinas Valley, the site benefits from big diurnal swings of warm days, cool nights, and a balanced coastal influence. This unique terroir offers excellent drainage and mineral-rich soils, ideal for producing wines of freshness, focus, and minerality.\u003c\/p\u003e\n\u003cp\u003eThe grape clusters are gently pressed and cold settled overnight before the fresh juice is transferred to concrete eggs and stainless steel for its spontaneous native yeast fermentation. Once primary fermentation is complete, the eggs are topped up and sealed for a 6-month sur-lie élevage.
